Moshico Coffee is an independent Adelaide Hills coffee roaster, producing specialty coffee in South Australia with a focus on quality, consistency, and honest flavour.
 
 Our Origin

Moshico Coffee began with Moshe Ezra; a lifelong tinkerer, food lover, and relentless pursuer of flavour. 

Born in Israel, Moshe served in the IDF where he became qualified as a mechanic, a trade he still practices today. Along the way he met his wife Moira, who was volunteering on the kibbutz where he lived. Together, they attempted life across several countries including Israel, England, and the United States before eventually settling in Sydney, where they fell in love with the Australian lifestyle and welcomed their first daughter, Ella.

After a few years, Moshe and his family followed friends to the Adelaide Hills, a move that would quietly shape the future of Moshico Coffee. Surrounded by producers, winemakers, and foodies, Moshe’s long‑held passion for food deepened. Coffee became the next obsession, not as a business idea, but as a personal challenge to create something that satisfied his own palate.

In true Moshe fashion, he went all in. He taught himself enough Turkish to negotiate the purchase of a 15kg Has Garanti drum roaster directly from Turkey. When it arrived in 2008, he began roasting in his workshop before eventually building a dedicated “coffee shed” on his property in Ashton for roasting and packaging.

What followed was years of experimentation. Beans from every region he could source were roasted, blended, and refined. Feedback came not from focus groups or marketing consultants, but from friends whose palates he trusted, including respected names from the wine and hospitality world such as Stephen George (Ashton Hills Vineyard) and Anton van Klopper (Lucy Margaux Wines). The deal was simple: free coffee in exchange for honest criticism.

That experimentation eventually became what is now known as the Moshico Original Blend. Locals began picking up their coffee directly from Moshe’s letterbox in Ashton. Word spread the old‑fashioned way, through quality, consistency, and trust; and before long, Moshico Coffee found its way into cafés and venues around Adelaide and the Hills, including The Piccadilly Fox and Juniper & Pine.

From the beginning, Moshe’s mission was clear - make great coffee without the unnecessary noise. No pretension, no trends for the sake of trends, just coffee that tastes like coffee and delivers every time.
 
A New Chapter

In 2024, Moshe stepped back from day‑to‑day operations and handed Moshico Coffee to his daughter Ella and her partner, Cohen.

By that point, Cohen had been roasting under Moshe’s guidance for over two years, learning not just the technical side of roasting, but the philosophy behind it. Moshe was ready to see the business evolve beyond the local letterbox pickups and into a broader community, all while knowing the values it was built on would remain intact.

Ella and Cohen took Moshico Coffee online, bringing it to a wider audience while keeping its Adelaide Hills roots firmly in place. Socials, direct‑to‑consumer sales, and expanded availability allowing Moshico to grow without losing its identity.
 
Why We Do What We Do

At its core, Moshico Coffee is still guided by the same principles it was founded on - let the palate lead. We believe great coffee doesn’t need to be over‑explained or dressed up. It should be honest, approachable, and consistently good. We avoid chasing marketing trends or falling into the more pretentious corners of the coffee industry, instead focusing on flavour, balance, and drinkability.

That doesn’t mean standing still. We are always learning, refining our roasting practices, expanding our knowledge, and experimenting with new regions, processes, and ethically sourced beans. Growth, for us, means getting better at what matters: quality, transparency, and respect for the people behind the coffee.

Everything we do is aimed at building a community we’re proud of, from the producers we work with, to the cafés that serve our coffee, to the people brewing it at home.

Moshico Coffee started as one person’s pursuit of the perfect cup. Today, it continues as a shared pursuit rooted in the Adelaide Hills, shaped by experience, and driven by a genuine love for coffee done properly.
