This Castillo variety has been honey processed with 120 hours of fermentation and solar drying, scoring 86 points on the cupping table. The result is a dense, full-bodied cup with lively acidity and notes of honey, yellow fruits and panela, showcasing the natural sweetness and clarity this region is known for.
